Directions
Cut chicken up into small 1-2 inch pieces, discarding unsavory bits. Season chicken with salt and pepper.
Heat large pot on medium-high heat, adding butter and olive oil.
Add chicken to pot for 5-10 minutes, browning on all sides.
Reduce heat to medium-low, and add red bell peppers, garlic, and green peppers. Sauté for 5 minutes.
In a mixing bowl, combine chicken stock, peanut butter, corn starch, soy sauce, and chili powder. Whisk until well incorporated.
Pour sauce into pot and bring to a boil.
Once boiling, set heat to low and let simmer for 5 minutes, or until thickened, stirring frequently.
Let cool, then eat as-is, or serve over brown rice/noodles/etc.
